I finally found the secret to making gluten-free cookies that keep a reasonable shape like "real" cookies - guar gum. These gingersnaps were incredible, if I do say so. Too bad I lost track of the original recipe I altered!
Yes they are, and I'll e-mail you the recipe shortly. This was the first year I've tried this, and it took a couple runs at it before I figured out the alterations that made them act like cookies.
Is Peggy going gluten-free now? I have other recipes too, if she wants/needs them.
Madcap, I'm interested in your gluten-free recipes too. I've been reading your blog, silently in the background, for a good while now, and am delighted you're back. I got here via earthhomegarden -- am a friend of Jim & Peg's from many moons ago. My mother-in-law has recently gone gluten-free, and she lives in the middle of beautiful nowhere Montana, so gluten-free foods (or ingredients to make them) aren't always so easy to come by where she is. I've been doing some testing of gluten-free biscuit recipes, found one I liked, and then sent a care package with the dry ingredients pre-mixed for easy biscuit making. I'd like to send her more yummy things, or recipes at least. If you send out recipes to Peggy, I'd love to be cc'ed! mamcleod@npgcable.com Thanks!

Several years ago Peggy discovered that she has Candida, a yeast imbalance, and she's been eating wheat free, yeast free, and gluten-free every since.
I'm sure she would love any recipes you can send her way.
